Orange Chicken

Ingredients
2 boneless, skinless chicken breasts
4 ounce BBQ sauce
8 ounce orange marmalade
1 tablespoon ginger, minced
2 tablespoon garlic, minced
2 tablespoon Soy sauce
2 tablespoon oil
0.25 cup chicken stock
0.25 cup cup flour (for dredging chicken)
0 dash red pepper flakes
0.5 teaspoon salt
2 scallions, thinly sliced, green parts only
Directions
- Place the inner pot into the Pressure Cooker. Press the CHICKEN/MEAT button. 15 minutes.
- Wait for the inner pot to get hot. Add oil
- Coat chicken breasts in cornstarch and fry in oil till golden brown.
- Add in the remaining ingredients. Stir to coat chicken in sauce.
- Place the lid on the Pressure Cooker and lock. Switch the Pressure Release Valve to Closed.
- Once the timer reaches 0, the Cooker will automatically switch to KEEP WARM. Press the CANCEL button. Switch the Pressure Release Valve to Open. When the steam is released completely, remove the lid.
- Serve over rice.
