Whole Chicken

Ingredients
6 pound chicken, rinsed
1 Onion, peeled and diced
1 large celery stalk, diced
1 Carrot, peeled and diced
4 red potatoes, quartered
2 sprigs rosemary
3 Sprigs fresh thyme
0 Salt & Pepper
1 tablespoon olive oil
Directions
- Preheat oven to 375 degrees.
- Add olive oil to the Copper Chef pan and brown chicken on all sides. Remove and set aside.
- Add vegetables and potatoes and cook for about 4 minutes.
- Place the chicken back in the pan on top of the vegetables.
- Place the pan in the oven and cook for 1 ½ - 2 hours.
- Serve.
