Chicken Avocado Soup

Ingredients
3 Chicken breasts, diced large
6 cup Chicken broth
15 ounce Diced tomatoes, drained
15 ounce Can of black beans, drained and rinsed
1 cup Frozen corn
1 Small onion, chopped
3 clove garlic, minced
0.5 Jalapeno deveined, diced
1 teaspoon oregano
1 teaspoon cumin
0.5 teaspoon Paprika
0 Salt and pepper to taste
2 tablespoon olive oil
2 Limes
2 Avocados
0 Fresh cilantro, chopped
Directions
- Place the Inner Pot in the Cooker. Press the Soup/Stew button to set for 10 minutes.
- Heat the olive oil. Add the onion and garlic. Cook 2 minutes.
- Add remaining ingredients except garnish. Stir well.
- Place the Lid on the Cooker. Lock the Lid and switch the Pressure Release Valve to Closed.
- Once the Timer reaches 0, the Cooker will automatically switch to KEEP WARM. Press the CANCEL button. Let the steam naturally release. When the steam is completely released, remove the Lid.
- Garnish with lime juice, diced avocado & cilantro.
- You can also add cooked brown rice, crushed tortilla chips, or grated cheese.
