Beef Roulade

Ingredients
3 Top round steaks thinly sliced
8 ounce mushrooms sliced
6 ounce spinach
2 tablespoon olive oil
1 Onion sliced
2 celery stalks diced
1 cup chicken stock
4 ounce red wine
3 tablespoon flour
2 tablespoon olive oil
1 bay leaf
1 teaspoon salt
1 teaspoon pepper
Directions
1. Place the Inner Pot in the pressure cooker. Press the Chicken Meat button. 15 min
2. Heat the olive oil then add mushrooms, Cook 2 minutes. Then add in the spinach until it wilts. Remove from the inner pot, let it cool, drain off excess liquid.
3. Press cancel
4. Lay out the steaks, spread out ¼ cup spinach and mushroom on the steak,
5. Roll up the steak, like a cigar. Fasten the steak with toothpick or string. Repeat with the remaining steaks
6. Place the Inner Pot in the pressure cooker. Press the Chicken Meat button. 15 min.
7. Heat 1 tbsp olive oil, then sear the rolled steaks. Remove and reserve for later
8. Add in 2 tbsp of olive oil, add in the onions and celery, and sweat for 2 min. Stir in the flour to make a roux.
9. Add the Red wine, chicken stock, bay leaf, salt and pepper. The sauce should start to thicken, return the seared beef.
10. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed.
11. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Press the CANCEL button. When the steam is completely released, remove the lid.
12. Remove the steaks slice in half.
13. Serve with mash potatoes and ladle sauce over meat and potatoes
