Greek Rice

Ingredients
4 tablespoon olive oil
1 cup onion, diced small
2 tablespoon garlic, minced
0 Lemon zest of 1 lemon
1 teaspoon cumin
0.5 pound Baby spinach
2 cup basmati rice
2.5 cup Chicken broth
4 tablespoon fresh dill, chopped
1 teaspoon salt
0.5 teaspoon pepper
Directions
Garnish: Lemon zest, Sliced almonds, Feta Cheese
- Place the inner pot into the Pressure Cooker. Press the Chicken/Meat button. 15 min
- Add the oil; sear each chicken to a light golden brown. Remove and reserve for later
- Add in the mushrooms, onions and garlic, and cook 2-3 min.
- Return chicken to inner pot, and then add in the wine, stock parsley and cornstarch slurry, mix.
- Place the lid on the Pressure Cooker and Lock. Switch the Pressure Release Valve to Closed.
- Once the timer reaches 0, the Cooker will automatically switch to KEEP WARM. Press the CANCEL button. Switch the Pressure Release Valve to Open. When the steam is released completely, remove the lid.
